Description
This is wonderful on toast, or served as a side dish.
Ingredients
| 2 | Ripe Tomatoes (Sliced) | |
| 1⁄2 | onion (Chopped) | |
| 2 | T | brown sugar |
| 1 | salt (to taste) | |
| 1⁄2 | t | Curry Powder |
| 1 | c | Grated Swiss or Gruyere cheese |
Instructions
Place the tomatoes on a flat sheet pan leaving a small space between each slice. Evenly sprinkle the brown sugar on top of the tomatoes. Sprinkle with a pinch of salt. Distribute the onion evenly over the tomatoes and top with the curry powder. Finish with a heaping tablespoon of shredded
cheese on top. Place under the broiler until the cheese melts and bubbles.
