Description

Serve on bread, especially pita, or over greens, if you have them available.

Ingredients

2Tlemon juice
1TExtra Virgin Olive Oil
2tSmall Capers
1 1⁄2tDried Oregano Leaves
1⁄2tgarlic powder
1⁄2tBlack Pepper
1 Pouch Tuna (Packed in Water)
1⁄2cTomatoes (Fresh or Canned)
1cMinced Red Onions
1⁄4cSliced Black Olives
1⁄4cFeta Cheese or Parmesan Cheese (Grated (Optional))

Instructions

Combine lemon juice, oil, capers, oregano, garlic powder and pepper in a bowl; mix well. Gently mix in tuna. Add tomatoes, red onions, olives and feta or parmesan, if using; lightly toss. Cut pita breads in half. Spoon mixture into pockets. Serve immediately. Makes 3 cups.
