Description
Serve on bread, especially pita, or over greens, if you have them available.
Ingredients
| 2 | T | lemon juice |
| 1 | T | Extra Virgin Olive Oil |
| 2 | t | Small Capers |
| 1 1⁄2 | t | Dried Oregano Leaves |
| 1⁄2 | t | garlic powder |
| 1⁄2 | t | Black Pepper |
| 1 | Pouch Tuna (Packed in Water) | |
| 1⁄2 | c | Tomatoes (Fresh or Canned) |
| 1 | c | Minced Red Onions |
| 1⁄4 | c | Sliced Black Olives |
| 1⁄4 | c | Feta Cheese or Parmesan Cheese (Grated (Optional)) |
Instructions
Combine lemon juice, oil, capers, oregano, garlic powder and pepper in a bowl; mix well. Gently mix in tuna. Add tomatoes, red onions, olives and feta or parmesan, if using; lightly toss. Cut pita breads in half. Spoon mixture into pockets. Serve immediately. Makes 3 cups.
