Description
This is the Irish version of mashed potatoes.
Ingredients
| 5 | lb | Bag of Potatoes (Peeled and Cubed) |
| 2 | c | Green Onions (Chopped (Scallions)) |
| 1 | c | Hot Milk |
| 4 | T | Fresh Butter |
| Salt to Taste |
Instructions
Boil potatoes in water until fork tender. Simmer green onions in the milk for a couple of minutes. Drain, then mash the potatoes, add hot milk and scallion mix, salt, pepper, and the butter. Mix well. Top with 1 additional tablespoon of butter in a small depression on top and allow it to melt before serving. Sprinkle with a little bit of paprika for color.
