Description

A great way to use your fresh garden cucumbers!

Ingredients

1TOlive Oil
2clvMinced Garlic
1 Small Onion (Chopped)
4cCucumbers (Peeled, Sliced, Seeded)
2cVegetable or Chicken Broth
 ozChopped Parsley
1⁄2cPlain Yogurt

Instructions

Heat oil in a saucepan and sauté onion and garlic until tender. Add cucumbers, broth, and season with salt and pepper. Simmer for 5 – 7 minutes. Using a hand mixer or a blender, puree the soup. Add the yogurt and chopped parsley and chill until it is time to serve. Serves 4.
