Description
A great way to use your fresh garden cucumbers!
Ingredients
| 1 | T | Olive Oil |
| 2 | clv | Minced Garlic |
| 1 | Small Onion (Chopped) | |
| 4 | c | Cucumbers (Peeled, Sliced, Seeded) |
| 2 | c | Vegetable or Chicken Broth |
| oz | Chopped Parsley | |
| 1⁄2 | c | Plain Yogurt |
Instructions
Heat oil in a saucepan and sauté onion and garlic until tender. Add cucumbers, broth, and season with salt and pepper. Simmer for 5 – 7 minutes. Using a hand mixer or a blender, puree the soup. Add the yogurt and chopped parsley and chill until it is time to serve. Serves 4.
