Description

Makes a wonderful luncheon as well as a wonderful addition to pre-dinner drinks on a hot summer evening.

Ingredients

2 Large or 2 Medium Tomatoes (Sliced)
1lbFresh Mozzarella Cheese (Sliced)
1 Large bunch of Basil leaves
2clvGarlic (Finely Chopped (Optional))
1 Balsamic Vinegar

Instructions

Using a flat tray, alternate a tomato slice with a slice of mozzarella and basil leaves. Make sure your basil is fresh and free of blemishes. It is best to keep fresh basil in a glass of fresh water on the counter rather than in your refrigerator where it will develop spots on the leaves. Use within a couple of days, and change the water daily. Sprinkle the finely chopped garlic over the top of the salad.

The beautiful combination of red, white, and green symbolizes the Italian flag to me! Some people prefer to simple offer the dish this way with the balsamic vinegar and olive oil added to each individual’s taste. I usually drizzle a little bit of olive oil and balsamic vinegar over the salad and provide additional small bowls for each diner to add more if they like. This is served with sliced and toasted Italian bread.
